Traditional Irish Scones. This recipe is straight from Ireland and the best I have ever come across in all of my years as a baker

Traditional Irish Scones

  • 2 1/2 cups all purpose flour sifted
  • 1/4 cup sugar
  • 5 oz butter salted - I prefer to use Kerrygold Irish Butter
  • 1/2 cup buttermilk cold
  • 1 tbsp baking powder
  • 1 large egg
  • generous pinch of salt

  1. Preheat oven to 425°F.  Sieve flour, baking powder and salt into a large bowl. Stir in sugar.
  2. With your hands, rub the butter into the flour until it resembled course breadcrumbs.
  3. With a whisk or fork, mix the egg into the buttermilk.
