Ricotta Cake

f you have read my writings long enough, you know my love affair with pound cakes.

  Ricotta Cake


  • 1-1/2 sticks unsalted butter room temperature
  • 1-1/2 cups granulated sugar
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1-1/2 cups flour
  • 1-1/2 cups ricotta whole milk
  • 3 eggs
  • 1 TBSP vanilla extract


  1. Preheat oven to 350.
  2. Grease a 9-inch loaf pan with non-stick spray.
  3. In an electric mixer with a paddle attachment, cream the butter and sugar until light and fluffy. (about 3-4 minutes)
