  Lemon Poppy Seed Cake with Cream Cheese Frosting

Lemon Poppy Seed Cake
  • 3/4 cup unsalted butter softened
  • 1 1/2 cup granulated sugar
  • 3 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1/3 cup cornstarch
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup sour cream room temperature
  • 3 tablespoons lemon zest freshly grated
  • 1/4 cup freshly squeezed lemon juice
  • 2-4 tablespoons poppy seeds I used 3 tablespoons

Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 1/4 cup unsalted butter softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon freshly squeezed lemon juice

For the Lemon Poppy Seed Cake
  1. Preheat the oven to 350F degrees.
  2. Grease and flour a 9x13 inch baking pan.
  3. In a large bowl beat together the butter and sugar until fluffy.
  4. Then beat in the eggs and vanilla.
  5. In a separate bowl whisk together the flour, cornstarch, baking powder, baking soda and salt.
